Big Tomato Sandwich
This is the best sandwich in the whole world. It is summertime on a plate. Perfect for a beach weekend lunch. David and Ashley went to the farmstand and got lovely tomatoes. David seemed skeptical when I started making the sandwich. He was picturing soft white bread and mayonnaise. Nope.

We now have NINE tomato plants growing in the backyard. I am so going to make this when we start getting tomatoes.
Oh, and we harvested our first crop of Pimientos de Padron on Monday. Mmmmm.
I was going to make this for Amanda while she was visiting but didn't see any good tomatoes here yet. It may be one of the first meals I fix in my new house. Six weeks away.....
