No oven-spring. Did I overproof them?
I know, I know... no matter what, they will be better than store-bought. But still :(

I really think we should be able to sample it to make sure it's okay for you. :-)
That happened to me before, more than once.... it is frustrating, because sometimes the bread still tastes delicious, right?
In one example, I am sure the problem was that the starter was not as active as it should have been, I skipped one feeding.
Another time was a complete mystery, as everything seemed just perfect.
I know that overproofing can cause that, but I am such an impatient person, with me that could never be the reason :-)
